Although still only in his mid 20’s, Joe is one of Australia’s most experienced distillers, leading the development of multiple global award winning gins, vodkas and whiskies. Joe started working in Lark Distillery at the age of 16, seeking out all the knowledge he possibly could and learning his trade under the guidance of Bill Lark.
In 2014, Joe took hold of the opportunity to become not only the first employee but the Head Distiller at Archie Rose in Sydney. Going on to develop a range of distilled spirits that have received numerous global awards and working closely with the bar scene, restaurateurs and other distillers alike. Returning to Tasmania, (which some say was to escape the heat) Joe has swapped the big city life for the rural haven that is Lawrenny Estate.
“Distilling to me is an amazing platform in which to tell a story and in the product itself there is the power to create more stories as it reaches people. I want the products I make to be a reflection on not only the environment that it is made, but the people who are a part of making it. It should invoke feeling or an experience and make you treat it like something special and not just another liquid in a glass.”
With the core range of Lawrenny Gin and Vodka now available, Joe has already set out with the team to create world class single malt whisky. Ensuring that everything from malting, brewing, distillation and barrel management are meticulously carried out to bring you a truly peerless whisky.
